1 pouch RightRice Wild Mushroom Risotto
3 cups chopped spinach
1/4 cup chopped sun-dried tomatoes (bagged or rinsed)
Optional topping: grated Parmesan cheese
In a medium pot, bring 2 cups of water to a boil. Add RightRice Risotto, reduce heat, and gently
boil uncovered for 5 minutes, stirring occasionally.
Remove from heat, and stir in spinach and sun-dried tomatoes. Cover and let stand for 7 minutes.
Stir well, and serve immediately.
