Whole Grain Banana Muffins
This easy recipe uses overripe or brown bananas. Twelve homemade
muffins cost less than $2 to make. They are great for breakfast or a
snack. These muffins can be frozen in a plastic freezer bag.
Ingredients
Wet Ingredients
2 tablespoons cooking oil
½ cup brown sugar
1 egg
2 ripe mashed bananas (1 cup)
1 cup milk
Dry Ingredients
2 cups whole wheat flour
1 teaspoon baking power
1 teaspoon baking soda
2 teaspoons ground cinnamon
Directions
1. Preheat oven to 350 degrees.
2. In a large, 2-quart bowl, mix oil and sugar
together, until smooth. Add the egg, mashed
banana and milk. Stir together.
3. Combine the dry ingredients together in a
medium, 1-quart bowl.
4. Stir the dry into wet ingredients, stir batter
together for 1 minute.
5. Lightly oil each section of a muffin tin. Spoon
the batter into each section.
6. Bake for 20 to 22 minutes, or firm to touch
and lightly browned.
Each muffin has 1.5 grams fiber, 150 calories, 3 grams fat, 220 milligrams sodium
